Sweet Potato & Apple Soup

Ingredients (serves 2-4)
2 Tbsp vomFASS Apple Balsamic Star
5 cups sweet potato peeled and cubed
1½ cups chopped apple (divided), any variety, (recommend gala or golden delicious)
1 Tbsp vomFASS Don Carlos Extra Virgin Olive Oil
1 shallot (1 large or 2 small) chopped
⅛ tsp fresh nutmeg
¼ tsp cinnamon
3½ cups low sodium vegetable broth (add just enough to cover your vegetables - you can add more if needed at the end of blending)
pinch kosher salt
fresh pepper
maple syrup (optional) 

Garnish
Fresh sage or chopped apples

Directions
Heat olive oil in a medium size soup pan.
Add the shallots and sauté until translucent.
Add the sweet potatoes, 1 cup apples and a good pinch of salt. Sauté for about 3 minutes.
Add in just enough broth to cover the vegetables. 
Simmer until sweet potatoes and apples are soft and tender.
Carefully blend the soup until smooth using an immersion blender, or allow to cool then transfer to a blender to puree. Add a little more broth if the soup is too thick for your liking, then stir to combine.
Stir in the Apple Balsamic Star and spices. You may add a touch of maple syrup to achieve optimal sweetness level.
Let simmer for 5 minutes; adjust seasonings and serve.
Garnish with fresh sage or chopped apples.
