Pistachio Hummus

This Pistachio Hummus is super simple recipe and it uses very few ingredients while sounding fancy at the same time.

Ingredients (serves 4-6)
¾ cup of pistachios (roasted/salted)
2 cans of garbanzo beans (reserve the water)
¼  cup vomFASS FassZination Pistachio Oil
1 Tbsp of cumin
2 Tbsp of tahini (or more to taste)
½ lemon, juiced
3 garlic cloves
1 Tbsp of chopped parsley (for garnish

Directions
In the bowl of a food processor, add the pistachios, reserved garbanzo bean water and oil. 
Blend on high for 1 minute.
Add the remaining ingredients (minus the parsley), blend for 1-2 minutes, scraping down the sides occasionally.
Sprinkle the parsley on top of the hummus. Add a few pistachio pieces for a textural difference.
Note: The pistachio flavor is mild at first- but really comes through the next day. If you plan on making this for a party, let it sit for a day!
