Pistachio Avocado Toast

A balanced combination of chewy, creamy and crunchy with unami and a pop of feta – creates excitement in every bite. Yum!
Ingredients (seves 2)
2 Tbsp chopped scallions
1 large ripe avocado, pit removed and skinless
1 Tbsp chopped parsley
1 Tbsp vomFASS FassZination Pistachio Oil
1 tsp lemon juice
Salt and pepper to taste
2 slices bread
¼ cup toasted pistachios, chopped
¼ cup feta
Salt and pepper to taste
Directions
In medium bowl, mash scallions, ½ avocado, chopped pistachios (reserve 1 Tbsp for garnish), parsley, FassZination Pistachio Oil, lemon juice, salt and pepper together with a potato masher or the back of a large fork.
Slice the other half of the avocado in slices.
Toast desired bread.
Smear mashed avocado mixture evenly on top of the two toast pieces; top with sliced avocado, pistachios and feta.
Serve within 10 minutes.
