Mojo-Fresco Marinated Shrimp

Add a little zip and zing with this sweet and spicy marinade. This recipe uses shrimp, but works just as well with other seafood, pork, chicken or beef. 

Ingredients (about ½ cup)
Marinade:

1 Tbsp vomFASS Wild Mango Balsamic Star
3 Tbsp freshly squeezed orange juice
1 Tbsp vomFASS Calamansi Balsam
2 Tbsp freshly pressed lime juice
3 Tbsp vomFASS Jalapeño Oil
2 Tbsp freshly chopped cilantro
1 Tbsp finely chopped garlic
¾ tsp ground cumin
½ tsp coarse sea salt

Shrimp:
1 lb shrimp, peeled and deveined
2 Tbsp Don Carlos Extra Virgin Olive Oil

Directions
Mix the liquids together and then add the spices. 

Add shrimp to bowl.
Toss evenly to coat.
Cover bowl and marinate in refrigerator for 4-6 hours.
When ready to cook, remove shrimp from bag and shake off excess.
Reserve marinade.
Heat oil in large skillet over medium heat. 
Add shrimp and cook 4-7 minutes until opaque.

Transfer to shrimp to plate.
Pour marinade into skilllet.

Simmer over medium heat until slightly thickened, about 5-8 minutes.
Serve alongside shrimp.

*Goes well with beef, lamb, poultry, fish, and other seafood also.

Note: Raw marinade used with shrimp should not be consumed unless cooked/reduced.
