Almond & Olive Oil Doughnut Cookie Delights

These delicious baked almond "donuts" are just the right amount of sweetness. They taste great with a cup of coffee for breakfast or when you’re craving a sweet treat. While you can make them for your family, they’re also a very impressive treat for holiday guests. 

Ingredients (about 30)
5 eggs
3 egg yolks
¾ cup sugar
1 cup vomFASS San Domenico Extra Virgin Olive Oil 
1 Tbsp vomFASS Orange Extra Virgin Olive Oil 
1 tsp almond extract
4 cups all-purpose flour
For the topping:
1½  cups chopped, untoasted blanched almonds
2½ cups powdered sugar
2 egg whites for glazing

Directions
Put the eggs, the yolks, and the sugar in a bowl and b
lend together.
Add half the flour and mix until just incorporated.
Alternating, drizzle in San Domenico Extra Virgin Olive Oil and add flour. Do not overmix.
Take about 3 Tbsp of the dough, roll into ball (almost golf ball-size) and then pinch the center to make doughnut shape and set on parchment. Repeat the process with the rest of the mixture to make all the doughnuts.
Brush them with beaten egg and gently press top into chopped almonds crumbles.
Bake in a pre-heated oven at 400ºF until lightly browned, approximately about 15 minutes-until some almonds are lightly browned.
Remove the doughnuts from the oven, let cool and sprinkle with powdered sugar.
