Irish Dream Cupcakes

One of these cupcakes maybe almost as good as what you'd find at the end of the rainbow...if you could find the end of a rainbow!

Ingredients (yields 18)
1 box triple chocolate cake mix
3 eggs
½ cup unsalted butter, softened
1 cup whole milk
¼ cup strong coffee
¼ cup Against the Grain Irish Single Grain Whiskey

FROSTING
1 cup unsalted butter, softened
3 cups powdered sugar
2 Tbl vomFASS Café Macchiatto Liqueur
2 tsp Against the Grain Irish Single Grain Whiskey

Directions
Preheat oven to 350ºF, and line cupcake pan with paper liners.
In a large bowl, combine the cake mix, butter, coffee, Against the Grain Irish Single Grain Whiskey, eggs, and milk until smooth.
Using an ice cream scoop, scoop the batter into the cupcake liners. Fill them 2/3 of the way full.
Bake 20 to 25 minutes or until toothpick inserted comes out clean. Cool completely.
FROSTING
In a large bowl, cream together the butter, powdered sugar, Café Macchiato Liqueur, and Against the Grain Irish Single Grain Whiskey, until smooth. Scrape down the sides as needed.
Pipe or spread onto cooled cupcakes.
