To select the best pomegranate at the market, don’t rely on color. Instead, look for unbruised fruit which feels heavy for its size and is almost hexagonal with matte (not glossy) leathery skin. Tap it lightly. The ones that make a tinny, “metallic” sound are ripe and full of flavor packed seeds. The average pomegranate contains about a 1/2 cup of seeds, but pomegranates can have as few as 200 or as many as 1400 seeds.
