The allure of the apricot is multifaceted. It captivates through its beauty and texture, blending with its complexity of taste and aroma. Apricots' sweet flavor with tart finish is often described as a cross between a peach and a plum, with a touch of apple and a tangy edge. That having been said, the texture of the apricot is denser and its flavor deeper than a peach, allowing it to stand up in cooked dishes alongside dishes like pork and chicken as well as in baked goods.       

Apricots have a delicate, sweet aroma with floral notes and hints of honey and almond, especially when the fruit is fully ripe. For many, apricots evoke fond memories of summer, family gatherings, and traditional recipes passed down through generations.  The combination of enticing aroma, and delicious flavor creates a holistic sensory experience that is deeply satisfying and pleasurable. 

Fleeting As Summer 

The velvety, fresh apricot is a delicate fruit and highly perishable, so fresh apricots in the market are often picked when not quite mature and still firm. While they will ripen in color, texture and juiciness after being picked, the flavor and sweetness will remain at the same level as when they were harvested. 

Very few things are as delicious as a tree-ripened apricot. However, under ambient conditions, apricot only has a 4–5-day shelf life, partly due to a high respiration rate and a rapid ripening process. Thus, most apricots are consumed as dried fruit. Commercially processed apricots often have much fuller flavor than fresh apricots found in the market because the processed apricots are left on the tree longer to ripen and naturally develop more flavor.
