A simple, straightforward, easy-to-drink Cava with fine bubbles, loads of tropical fruit and yeasty, bready notes.

Pristina is a second bottling, historically unavailable in the US, from one of the founding Cava houses in Almendralejo, a small Spanish town near the Portuguese border. A Georgetown-sized place with gorgeous architecture and rich cultural heritage, Almendralejo is one of the few towns in the western half of Spain authorized by the CAVA Regulatory Council to produce wine labeled as CAVA.

Food suggestions: A perfect charcuterie wine! The locals often drink it with Shepherd's pie.
