The Pyrenees has now become the unmissable epicenter of sustainably farmed, high-quality Cava produced in the méthode champenoise. Jané Ventura’s 2017 “Reserva de la Música” is one of the absolute classics. The Jané family has been farming this area of Spain for over 100 years; the vines are organically farmed; and, incredibly, they’ve been bottling today’s “Brut Nature” cuvée since 1988, long before Champagne decided to champion the non-dosage (no added sugar) movement.

It has a bright pale straw yellow color with small bubbles and delicate aroma of white fruit (apple, pear), aromatic herbs, lemon cream and citrus notes. It's persistent and creamy having the an almost mousse-like mouthfeel. Delicate mineral notes enhance the sensation of freshness in the mouth at the end.

Pairs well with appetizers, ham, smoked meats, fish carpaccio, rice, pâtés and cheeses.
