Because dates only ripen at temperatures between 87° and 96°, the raw substance for this balsamic specialty comes from the Near East. This is where the “real" date palm originates and the best quality fruits are produced. This balsam vinegar stands out thanks to its fruity, spicy notes, a smooth consistency, and velvety sweetness with a subtle tartness.
